Glycation is the normal process by which glucose and other sugars react with proteins to form an array of structures known as advanced glycation end-products (AGEs) over time. However, AGEs are toxic to human cells and are implicated in the acceleration of inflammatory and oxidative processes, with their accumulation in the skin being associated with accelerated aging, as the permanent damage to the skin's fibers and proteins prevents regeneration.

Toxic sugars cause proteins to fuse together
in a “cross-linking” process called glycation. The result: skin loses
water and elasticity; it forms lines, wrinkles and a texture that is less
than dewy, soft and clear; and collagen shrinks. This shrinking causes
collagen to collapse, which leads to fine lines, wrinkles, and dry,
flaking skin. Glycation also causes inflammation and oxidative stress
which cause redness, irritation, and continued aging.

Glycation typically begins around the age of 20, and symptoms tend to manifest in the skin in your early 30s in the form of
